Slow Cooked & Low Carb
The other night I made a slow cooked, low carb, BBQ roast. It was pretty good! Would have loved to have had it over rice, or being able to put it on some bread, but I didn't!! I am a sucker for anything BBQ, but BBQ is high in sugar. This recipe called for a low carb BBq sauce which I made. I got the recipe from Linda's website (she has so many, and the ones I have tried are so good). Here's the recipe for her Laredo Babecued Pot Roast. For a side I made a side of green beans that I cooked in the oven. She has a recipe for a dish similiar to mine.
For the pot roast, I did tweek it some; I used whatever I had on hand for the BBQ sauce. I didn't have cider vinegar, but had balsamic, so I used some of that. I also didn't have tomato sauce, but tomato paste, so I just added water to the paste!!
All in all, it turned out good. Tonight's menu is: Houston Chicken!! I will post tomorrow about how that went!!
