Skrimps and Pot Pie

Yes, I meant to put SKRIMPS! OK, so the past few days have been hectic, so I am going to write about the past 2 dinner we have had that have been pretty good. The other night I made Shrimp Scampi. The recipe for it is here. I added aspargus to my shrimp. It was so good!! The one thing I would change is to saute the asparagus in a seperate skillet before putting it with the shrimp, because in the end the shrimp turned a green color and it just didn't look too pretty!! The boys liked it, so I think it will be a keeper! Also, we eat a lot of chicken, so it was nice to throw some seafood into the mix. It was also a very quick meal. I bought the shrimp already cooked from Aldi, so I just had to defrost it in cool water and then I pinched the tails off. I may next time use more shrimp than I did because my husband was asking for more!!




Last night I made a chicken pot pie! I love chicken pot pie, but I use to make it with 2 pie crusts. As much as I love the pie crusts, they do not fall into my low carb diet. The crust was the Oopsie Dough (recipe), and I have used Oopies to make bacon, egg, and cheese sandwiches,and you can use it to replace bread. You can find the recipe for the chicken pot pie here. I was a bit hesitant about it all because I wasn't sure how the dough would taste with the filling on top of it, but it was sooooooo good. It too is a pretty quick recipe. The filling calls for alfredo sauce and I made it the Atkins way:
- 1 cup butter
-8 oz of cream cheese
-1 tsp of garlic powder
- 1 cup cream
-1/2 cup parmesian cheese
Melt the butter first in the pan, then add the cream chese. Whisk them together until all clumps of cream cheese are smooth. Then add the garlic powder, cream and parmesian cheese.
I am pretty sure you can buy store bought alredo sauce,but just check label if you are trying to do low carb.





Tonight I am making taco salad bowls out of zucchini...they are in the fridge chilling now, so we shall see...

Yum-Moo!

Before discussing a great snack I give the kids, I wanted to confess that I went to dinner last night!! I really wanted a nice big salad, so I told Jason that I thought we should go out and we had to stick to our guns! This was a tst of our will power. In the last 5 weeks, we haven't been to dinner, except on our anniversary 2 weeks ago. We split fajitas and had margaritas, so that night was no good!! But, last night I thought we could test out our strength. We decided on Chili's because they have their 2 for $20; you get an appetizer and 2 entrees. When we get there Jason of course wants the fried onion rings! I said no, so we decided on the queso and salsa. I ordered the Quesadilla Explosion Salad! I've had it before and it is so good!! I did however request not to have the corn/bean relish, so that helped, nutritionally wise. It does come with 4 cheese quesadillas, but I gave those to the kids. So all I had on the salad was the lettuce, cheese, tomatoes, and the tortilla strips! A pretty descent dinner.






Now, on to my real reason!! My sister in law had been telling me about this great snack that she was giving to her kids, frozen yogurt. She would buy the Yoplait Go-Gurts and put them in the freeze, then give them to her kids like popsicles. I thought I would try that method and see how it went! SCORE!! The boys LOVE them. They love yogurt and would eat it all day long if allowed. The Go-Gurts at Wal-Mart run about $2.50 for 8 tubes. I found another brand, Friendly Farms Moo-Tubes, at Aldi and they were only $1.98
for 8. And since my boys are fairly young, I cut 1 tube in half and they each get a half for a snack!! Enjoy and have a great weekend!

Low Carb Pizza

OK- Since it's Friday, I thougt I would post about this fabulous pizza I made the other day. Jason doesn't work M-F, his days off rotate each month, so on his "Friday", we tend to go to dinner, or do a guilty pleasure dinner. Well, since I have had this kick in the butt recently, I wanted to find a healthy version of pizza. And I did! I found it on Linda's Low Carb Menus and it is fabulous!! Here's the recipe. When I cooked it, the parchment tick worked really well and I made my crust a few hours before we are. Letting it sit in the fridge for a couple of hours really did make a difference when it came to holding the pizza in your hand.



It went over really well with the kids and the husband!!

Why?

Many of you probably have no idea as to why I am doing this blog. And in reality, I don't know why I am doing this. What I do know is that I love to blog and I love to cook. I have always enjoyed cooking, but once I took on the domestic role of wife and mother, I have tried to learn more and try new things.

I probably won't use this blog to talk about just recipes, I want to talk about food, what foods my kids will/will not eat, housework, and all things that go into being a domestic diva!! Since becoming a SAHM 6 months ago, I have had to reprogram myself and realize that my home and kids are my full tim job now. Yes, they were my job when I was teaching, but I didn't do housework everyday and I only saw my children AWAKE for a couple of hours a day.

I recently had a baby in December (it's only been 3 months, so I can still use the word 'recently'), and I have been working on getting the weigt off. My 2nd and 3rd children are only 14 months apart! So, I was pregnant for a very long time!! I have decided that one of the best ways to get this weight off and rejumpstart our healthy lifestle, is to go low carb. I try not to think about it being a fad diet, but just as starting over. A lot of the recipes I have tried are on the websites posted in Helpful Links. As I do these, I will post my pictures of the final product and let you know how it went!!
