Chicken Is A Great Staple

In our house we eat A LOT of chicken. My mother often jokes about that and how all we eat is chicken, and it is so true. Chicken is great source of protein and you can prepare it just about anyway. I found this great recipe on Linda's site called Houston Chicken. It reminded me of a chicken sandwhich, sans the bun. It has a low carb BBQ sauce on it, which I got from Linda's site also, bacon and cheese!! I had to tweak the sauce to our liking, bc it was a bit too sweet for us, so I added a bit of Corky's BBQ sauce in with ours, which made the carb count a bit higher, but, other than that it was pretty easy. It makes a big enough batch to where I could put it in a jar and keep it in the fridge for future uses. I also did green beans for the side. Everyone LOVED the dish and Jason requested that I cook this at least once a week!! A bit of a warning though, the recipe says to put your top rack as high as it can go to get it close to the broiler, then broil the chicken for 3 minutes to cook the bacon more (I did the easier method of the recipe). PLEASE BE CAREFUL!! I did what it said and I then saw smoke coming out of the oven and when I opened the door, there were some flames!! I actually put the rack on the secnd to highest, because I felt the highest setting was too high. So, just keep an eye on it when you do this!! BBQ sauce cooking

This is a great recipe and so good!! The bacon makes the dish and it was very satisfying!! I only ate HALF a chicken breast and it filled me up. I did want to eat some more because the taste was incredible, but I was full! Happy Eating!

Slow Cooked & Low Carb

The other night I made a slow cooked, low carb, BBQ roast. It was pretty good! Would have loved to have had it over rice, or being able to put it on some bread, but I didn't!! I am a sucker for anything BBQ, but BBQ is high in sugar. This recipe called for a low carb BBq sauce which I made. I got the recipe from Linda's website (she has so many, and the ones I have tried are so good). Here's the recipe for her Laredo Babecued Pot Roast. For a side I made a side of green beans that I cooked in the oven. She has a recipe for a dish similiar to mine. For the pot roast, I did tweek it some; I used whatever I had on hand for the BBQ sauce. I didn't have cider vinegar, but had balsamic, so I used some of that. I also didn't have tomato sauce, but tomato paste, so I just added water to the paste!! All in all, it turned out good. Tonight's menu is: Houston Chicken!! I will post tomorrow about how that went!! Cheeseburger Skillet & Just Like Stuffed Baked Potatoes

OK, so last night I cooked a phenomenal dinner! All low carb, and all from Linda's website. Here is a picture of the cheeseburger skillet cooking. And again, the recipe. I did what she suggested, by cooking the meat after I cooked the bacon, so the meat would get the bacon flavor. I also used turket meat instead of ground meat. I did not put onions in mine, after it was finished, I just put lettuce, pickles, and crumbled bacon on top.
I also made her Just Like Stuffed Baked Potatoes. I am not a cauliflower fan, but thought I would try this. All in all, it was pretty good. Texture isn't quite like potatoes, but it did the trick! Here's the recipe for it.
Here's a picture of the final product! Boys really enjoyed it and actually ate the cauliflower! Jason raved about it, so it will be a meal I cook again!! I will be going through her recipes today to find more things to add to my arsenol. Now, in regards to house cleaning, I need to get back on my Flylady routine. Fell of the wagon...

OK, I wanted to do this blog for myself, and my discovery of healthier eating. However, there have been so many activities in our life lately, that healthy eating has been hard!!! Not an excuse, I know, but for someone who has been trying to get back on this wagon, it's all I got! I have been struggling with weight since college. However, I started working our regularly and eating right, that for a few years I did well. Fast forward to babies!! I will NOT use the excuse of having children for me still struggling. I did have 5 pregnancies in 4 years! Also, I became pregnant with my third child when my second was only 5 months old!! I am trying to find the healthiest and best way to do this. I am someone that will start something, get motivated, then grow bored of it and stop, that is a flaw of mine that I hate. When I was doing low carb cooking, I was so happy. I was cooking, which I love to do, experimenting with recipes, and slowly shedding pounds. I don't have a lot to get rid of, but I want to be happy with myself. So, I am going back to low carb eating and will try to use this blog to help keep me motivated. Any words of encouragement would be greatly appreciated too!! Tonight I am going to try this recipe: Linda's website, is a great website that talks about her journey, and the journey for others who have gone low carb. I have used many of her recipes in the past and have loved them!! I will post a picture of my Cheeseburger Skillet tomorrow!! Happy Eating!!
